James’ most vivid memory is his time doing laps of the Mediterranean cooking on a sixty-foot ketch and then a Saudi Princes fifty-metre cruiser strapped to a swivelling stove in a kitchen the size of a cupboard!

From intimate bistros, to head chef in a two-hundred seat restaurant, James has vast experience working with different kitchens, customers and conditions. Now, James has made Australia his permanent home and believes it is, without doubt, the best ‘foodie’ place on the planet.

James is extremely passionate about his cooking and he loves to use fresh quality ingredients. He has an energetic and inspirational flair that will encourage any home chef – his passion to create delicious dishes really is contagious.
